Black Bean & Avo Salad
This recipe is so simple and quick that it will leave you with wanting more.
Here's what you'll need:
1 can of black beans, drained and rinsed
1 can of corn
1 red pepper
Diced 1/2 avocado
Diced a few sprigs of green onion, sliced
1 orange, juiced
1 tsp garlic powder
1 tbsp jalapeno brine
salt & pepper to taste
Roast the corn and peppers in a pan over high heat, until chard. In a bowl, combine with black beans, green onion and avocado. Combine the dressing ingredients in a cup or bowl, add to the black bean/corn/pepper mixture. Enjoy :)
PS: This recipe tastes even better the next day. It also can be used as a burrito or taco filling.
